A splendidly long weekend was had, and now it's Tuesday.
I love it when Tuesday feels like Monday, but it's not Monday. 

I'll go into the details of my wonderful weekend later today in another post, too many happy details to recall at this moment....
Besides, I really just want to post some pictures of food, and Elmer too.

Happy Belated Mom's day to all of you who don that title.
D's been out of town since last Friday so I had the Sis over and we rocked it "girlie weekend" style. There is something truly medicinal about laughing hysterically at yourself. We always managed to do this non-stop when we're together.

Saturday evening we watched three Buster Keaton flicks, and in between movies and snacks we managed to blow up roughly forty balloons to decorate my house with...for Mothers Day of course! What good is a holiday if you can't have balloons?? Needless to say the Mom was happy to see them strung throughout the house (and I'm leaving them up for when D comes home tomorrow --- a perfect way to welcome him back!!).
We had a ton of yummy snacks, played with the cheap party favors I picked up from my neighborhood drug store, and went around in a circle sharing stories that related to Mom and our childhood (one of my favorite things to do during family gatherings).

I came up with a couple very simple and YUMMY rawfood party snacks/treats that I'll share with ya'll under the cut...

A Salad (of sorts) that I had for dinner the other day...
I was in a hurry to eat, but right before I gobbled it up I realized how unattractive it looked on the plate. Oh well, it's just proof that not everything I eat looks "pretty"

 

Now tell me that this doesn't look weird, and kind of gross. At least it tasted much better then it's appearance.

In Layers:
*Sprouts
*Sunflower Parm
*Spiral-cut Carrot
*A few dashes of Vinaigrette
*Minced Sundried Tomatoes
*Julienned Cucumber
*Julienned Mango
*Topped with Agave-Mustard-Avocado dip (sounds weird, but it's SOO good!)

By some strange act of science I've developed a serious love for an activity that I never thought physically possible...mainly because of my history with bronchial asthma. Over the last few weeks I've fallen very deeply in love with running. Granted I don't think I'll ever consider myself a "runner", but so far I've built up my pace to one mile [this is HUGE] without stopping, and my goal over the next year is to run every single day - at the very most taking one day off - and doing the Trinidad to Clam Beach run with C. I seriously don't remember the last time I've felt so good, and I never thought in a million years that I'd be addicted to an activity that I could barely even stand the thought of not too long ago.

On a similar note - I finally uploaded a TON of pictures from my camera...including some yummy food.

I love it when it's Saturday and I think it's Sunday - and then I remember that it's Saturday! It's a good feeling inside to know that I've got another day off to enjoy.

We took Lucy for a car ride, and headed down to the Shanty for an afternoon cocktail, and also to pick up two free tickets to the fair (tomorrow's the last day) courtesy of our wonderful friend and bartender, Todd.
When we got home I had an unusual craving for something sweet - so I whipped up a quick and SUPER easy batch of sorbet. Oopsie though - I made too much - so I ended up turning the leftovers into popsicles for another day. 
After the sorbet I decided to make some cashew and almond butter. I had to keep myself from eating it all because it was sooooo yummy!

Ugh. I caught another cold - making this the 20th time I've been sick this year? Well, I can be thankful because this cold is very mild in comparison to the ones I caught early this year. I'm just very tired, with a lack of appetite and energy. After getting home from work these last few days I've done nothing more than a light workout, and cuddled up on the sofa to watch the olympics. Yesterday I finally started to feel inspired to make something other than a smoothie...which in turn became a very rewarding dinner.


I can't believe D and I are so close to our 1 year wedding anniversary! We've been deliberating on what to do/where to go to celebrate, and as of last night I think we've made our official decision: The Turtle Rock Resort, in Gold Beach Oregon. Just far enough outside of humboldt county to make it feel like a mini-vaca, but not too much of a drive. D's been chatting with the manager of the resort, and it sounds like their putting us in the best cottage available, that includes a private hot-tub on the side deck, and river/ocean access pretty much as soon as we step outside of the front door. And - we get to bring Lucy too!

Labor day weekend (before our anniversary) we'll be camping with a ton (and by a ton, I mean almost every one we know) up by Richardson's grove to watch Willie Nelson play what could be one of his last and biggest concerts ever. While I'm not a Willie fan, this seems to be one of those events that I'll most likely kick myself in the ass for not going too - not to mention, I know it's going to be loads of fun. I'm also bracing myself for the extreme amount of children that will also be attending this event... *cringe*

It's been a fun and enjoyable Saturday!
We slept in a little bit, and then headed out to embark on a yard/garage sale treasure hunt - and boy was it a success!!

After our adventures I headed up to Arcata to do some more bonding with Dean at Visual. I can't believe he got SO much done!!! It's almost fini - with only a few more details left! Big ups to Dean, who is celebrating his b-day this weekend.

This weekend has been very busy! So today D and I spent a bit of time at home - cleaning, cooking, and being all-around couch potatos. It was nice.

I rarely have a sweet tooth, so when I got a sugar craving this afternoon I whipped up some yummy sorbet!
Super easy, and a perfect balance of sweet and tangy.


One of my favorite movies is on AMC right now - "Meet me in St. Louis"! Gosh I love Judy Garland!
