Because I don't always have the time to make/eat exciting gourmet raw food...
Here's some simple food I've snacked on recently...


Today's breakfast: Perfectly fresh Mango & Orange Julius inspired smoothie (SO GOOD)


A simple yummy snack to fight the cooked food cravings:
Equal parts Medjool Date paste with Equal parts Almond Butter, and a few dashes of Sea Salt

Remember a while back, when I posted this?

Well...It's been done. 

Upon recently concocting what I'd like to not-so-humbly call "The Best Raw Mac n' Cheese You've Never Had", and thereafter eating three bowls, each time better than the first, and each bite full of mumbles: "ohdearlord, wowiewowow, thisissogoodi'mgonnadie" ---- um, where was I going with this??
Oh yeah...
So I went to the grocery store on my lunch today and bought FIVE pounds of zucchini...the checker asked me: "Making Zucchini bread?" To which I replied: "Nope - making cheese."
Those five pounds of zucchini have been respectively shredded, and are now taking up all six of my dehydrator trays. The smell of dehydrating zucchini is permeating my kitchen. And I am happy.. 

It's impossible for me to give a short answer about the food I love because once I start talking about it, it usually sparks more and more conversation. And of course I will excitedly go on and on...and on. I've been thinking about making business cards with just AddictedtoVeggies.com on them, because more than a few times a day (at least when I go out) I'll start up a conversation with someone about food. 

Oh man you guys - I can't even explain to you how amazing this raw  Mac n' Cheese is...it's like the happiest food I've ever eaten. And to be quite honest, I've been having a difficult time with my eating habits this Winter, when I'm not eating right (for my body) I feel it in so many different negative ways. So this recipe has really come at the most perfect time. And so has Spring.
The only down side to this recipe is that it does require a dehydrator to properly get that "aged cheese flavor". So if you don't have one then beg, borrow, or steal one. In the meantime I promise you that I'll start playing around with  a no-dehydrator-required version of it too. I don't want anyone to miss out on this!! Blarg!

In spite of the sadness surrounding the opening ceremonies I'm still very excited to have been able to enjoy them with good company this evening
AND I somehow managed to whip out snacks that were not only pretty tasty, but Olympic color themed too!


Above was our grocery shopping list. You should have seen me running around the grocery store like a madwoman trying to figure out what colors of raw food I could combine to make something remotely close to "black" - and still tasting good...

Current favorite eats: The Beet Burger

Now, let me start this off with a frustrating fact/confession:
I am THE WORST at meal planning.
I can try and try and try and try - but I still haven't seemed to get it down to a science....in spite of how much I love and crave structure in my life.

Here's another fun fact about me: I don't like to do things the way other people do them.
I've read about, researched, and talked to many people concerning meal planning and the "proper technique" for effectiveness. None of it makes sense to meee! I'm stubborn. I like to pick things apart and translate them into my own language...but I'm lazy too. Hehheh.

Maybe it's because I spend so much time reading my old cook books and thinking about new food ideas. Either way I'm just about at my wit's end.
I WANT TO MEAL PLAN, goshdarnit!
And I'm gonna do it if it kills me!

So what does this mean?
I don't have any clue --- yet.
But I DO know that I've got two kitchen journals brimming with my own food recipes, decent stuff that's easy to make, and yummy too. AND I've got a plethora of really fun vintage cookbooks that remain my biggest inspiration for the food I make. 
For starters I've GOT to GET BACK to my weekly food prep habit (Sundays and Wednesdays). I guess that's the best place to start.

I'm going to make this work. I really want to, for myself and for you all. I'm tired of having SO much amazing produce at my disposal but never doing anything structured with it! I don't mind monotony throughout the week where my meals are concerned --- and then having something wonderful and exciting on two (or even three) of those seven nights.

Previews of what's to come:
At the moment I've been playing around with a LOT of soup ideas. One the sis even labeled "Raw-men" soup. I've been focusing mainly on "quick and easy" recipes, which at the most will require the use of a food processor or high speed blender. My palate for the most part always seems to revolve around comfort foods (recreating those familiar dishes with a raw twist), acidic foods, and savory foods. At the moment I've been playing with lots of dark greens (massaged kale/spinach/chard, and broccoli) and thinking about warmed sauces to go
with them.

When making orange juice for your smoothie do not get over zealous with the orange zest.
A little bit of orange peel goes a long way.
Trust me.
Otherwise you'll end up squinting every time you take a sip of your smoothie.
But hey, at least you know you're getting a heavy does of vitamin C!

Zucchini-Parm Stuffed with a wilted Swiss Chard/Walnut crumble mixture, served with Apple/Tomato/Bell pepper Marinara

Umm. I'm really kind of speechless about this dish. It's SO unbelievably "quick and easy", taste-satisfying, and just magnificent.
When I whipped it up for the Sis this afternoon (on my lunch break) all she said was: "Mmmmmm. It's giving me goose-bumps".
I reallyreallyreally can't wait to share this with you guys!!!!!!

While the following recipe might be old news to most of you, it never gets old with me, and remains my all time favorite treat, not to mention a current favorite breakfast pick-me-up.

My Favorite Smoothie


3 C Frozen Bananas
2 whole ripe peeled Bananas
2-3 C frozen Pineapple
6 C Fresh Squeezed Orange Juice
Zest of 1 large Orange
2 tsp Vanilla

Blend!!

Drink, sip, sigh, smile, refrigerate for later - or share with a loved one for optimal enjoyment.

Hi.
I miss you livejournal.

All is well in the wacky land of Sarahfae.

I've been wrapped up in:
Girl-time, Housekeeping, Health up-keeping, Familial prioritizing, Twilight nerdiness, Birthday celebrations, Holiday decorating, Buffy the Vampire Slayer marathon planning, Christmas shopping, and all the while trying to stay "in touch" with myself.
I'd be lying if I said I wasn't tired. I'm kind of exhausted. Thankfully I have some pretty amazing people in my life, not no mention my obsessive hobbies that keep me grounded and in the clouds all at the same time...

Cheezey stuffed tomatoes (old photo from one of my lunches - but still yummy)

Wow. I can't believe that D and I will be leaving for SoCal next week!
I am starting to get really excited about this years "No-turkey day" meal. Even in spite of the fact that we'll be away from home, and I'll be packing most of my food in a cooler. Tonight I perfected a stuffing that will be paired with (stuffed into) a lightly dehydrated/marinaded savory eggplant and dressed with a creamy almond gravy. I ate the finished product for dinner tonight, while the hub and good friend munched on pizza. I can honestly say that for the first time in a while I wasn't even remotely teased by their cheesy doughy dinner. Mine was perrrrrfect, and I can't wait to share it with you guys. I have every intention to do so before the holiday!
"No-Turkey day" dinner thus far:
  • - Savory Eggplant with Perfect Holiday Stuffing
  • - Creamy Almond Gravy
  • - Creamy "Mashed" Parsnip-tatoes
  • - Massaged Kale w/ sweet mustard dressing
  • - Mini-Blueberry cheeze cake tarts
