I've been meaning to post this sooner - and I'm really excited to finally do so!

Last weekend, when my lil' sis was staying over I finally decided to try my hand at making raw chocolate pudding. The results were verrrry impressive, considering the fact that I totally winged it and made up the recipe as I went along!
My only complaint is that it turned out soooo freaking rich and sweet - and because I'm not a big fan of sweets I'm now finding myself in a situation with a lot of chocolate pudding, and not enough people to eat it. For now it sits in the freezer, until I can get some mini re-usable pudding cups, or some popsicle molds (they'd make the BEST fudgesicles!).

The lil' sis and I had the pudding over some fruit salad, and right now I've got some bananas in the freezer that have ben dipped in it. Feel free to come over and help me finish the rest of it!

I'm feeling very accomplished this evening. Sipping on my "every-once-in-a-while treat", ice cold ginger-ale with fresh lemon juice. Sooo yummy.

At the moment I've got the dehydrator loaded full of goodies:
Strawberries, my home made sun dried tomatoes (tossed with: nut. yeast, balsamic vinegar, sea salt and pepper), and *drum roll*....daikon radish chips - tossed with evoo and sea salt. Those chips are going to be SO yummy with just about everything - from my "chickpea-less hummus", to guacamole, or just plain by themselves.
*Pampering Tip:
When working with evoo, or just about any oil in the kitchen...let it get on your hands. Don't wash it off - just pat your hands with a towl, and let the oil absorb into your skin. It's a quick and nice way to moisturize while you're getting dinner ready.

Read more... )I think I've been doing really well with my commitment to phasing back into a mostly raw food diet. So far I'm only allowing myself one type of cooked food a day as a part of a meal. The cooked food most often ends up being a part of dinner, but on days when I don't bring lunch with me to work [like today] my lunch usually ends up being mostly cooked[as per my sweet hubby providing it], and so dinner tonight was all raw. I'm having a lot more fun this time around, verses when I first tried the transition last year. My mistake was mostly just jumping in head first, thinking "I can do this with no turning back". Being vegan and gluten free helped, but the lack of information and over-zealous approach I took was my undoing. This time around I'm feeling much more realistic, much more educated, and totally comfortable with my own pace and style.

Merry Xmas ya'll!
I am relieved that the holiday is over, but sad in a small way too.
Family was wonderful tonight: bonding with the not-so-lil'-sis, Wii bowling, stinky-dog petting, stuffing my face with yummy food, laughing to the point of snorting, smiles, memories, and tons of wonderful affection from my awesome hubby. Cheers!

My favorite gifts (from the hub) are as follows: the most' perfect porcelian elephant (40's era), old-school canvass vans (the feet kind), and a verrrry thoughtful book titled "The End of Faith" by Sam Harris --- I can't wait to sink my eyeballs into it!

At the moment I've got a very sweet little Kona sleeping at my side --- her parents are on an Xmas holiday in Ashland, so D and I are doggy-sitting until tomorrow. We are very happy to have her, and I think Lucy is too. Lots of cute doggy/holiday pics to come.

For now, how about a cute snap of me and my adorable sister?

I woke up this morning with D [he gets up before sunrise every day to go to work], and of course I could'nt get back to sleep...so what did I do? I looked for the usb chord to my camera. And I found it!!!

Things have been so busy lately that I haven't had anytime to post pics -- in spite of the fact that I've taken so many.

D and I went to the pumpkin patch a week before Halloween with our friends Lindsey and Brillo, and their adorable little boy Asher (I call him Thrasher). We always have a good time hanging out with them, but I've got the pics to prove it...

Oh how productive my days have been. I really feel like I've been seeing life through rose colored glasses over the last few weeks - and it doesn't seem to be letting up. While I haven't had the time to work-out  every day like I was doing, I'm still feeling wonderful about everything in general; including my body.

On Monday I put my big porcelain water/juice jug [thank you Carinna!] out on our front stoop, filled with water and a mix of green and mint tea. The result was the most tasty sun-tea I've had in a long time! I've been using the sun-tea in my morning smoothies in the place of what would normally be just water. I highly recommend doing this!

Silver hopped in the dryer last night, right as my laundry was done - and because I never can get a good picture of her, I jumped on the photo-op. Her eyes always look so weird in pictures...

I woke up this morning to blue sky---blue sky and 70 degree weather! Such a nice change from a hazy smokey sky. So after tussling around with Lucy for a bit I got out of bed and started to prep for the family barbe-que that was to take place at the Mom's house.
I had to flake on farmers market, and go the route of ENF (Eureka Natural Foods) for groceries, mainly because of our/D's 25% employee discount (jokingly I always tell him it's the reason why I married him in the first place). While I'm huge on supporting local farmers, time constraints enevitably won this weekend. *sad face*

Right now I'm just relaxing on the sofa, sipping on a glass of emergen-c, and listening to Ol' Blue Eyes sing "The Girl From Eponema"...one my favorite renditions. SJ is going to be here around 8pm, and from there we're going to play dress-up, and walk over the the Lil' Red Lion to check out the Zombie film-show that's suppose to take place around 10. Care to join us?

I've been listening to some of my old mixed CD's as of late - and my favorite ones are the "Golden Oldies" from the war-time era...Johnny Mathis, Perry Como, Nat King Cole, Andy Williams...and early Frank.
If you've never listened to the McGuire Sisters - well, you're missing out! I couldn't find them singing "Blue Room" (which is my personal fav), but "No More" is just as good... I will never get tired of listening to this kind of music as long as I live.

Back from our day of fun! We spent the afternoon with my (and D's now too) wonderful brother, sister-in-law, and my most favorite nephew in the whole entire universe! 
First was the Farmers Market/Pastels on the Plaza, onto the pumpkin patch and corn maze, and a lovely lunch at 6Rivers to close out the fun family date. Lots of pictures were taken, and lots of fun was had. 
We love those guys SO much, and it's going to be very bittersweet for us to watch them pack up and start their exciting new life in Spokane. We are extremely happy for them though...but the state of Washington had better treat them well, or we'll be paying a visit with our fists a' flyin.

We met with the mortgage broker today, and much to my surprise it went very well. A very educational hour and a half was spent discussing the loan process - giving us a very clear perspective on which direction we should take.
D and I walked out of there, and without even swapping our opinions he said: "I know we should wait at least a year to buy a house, I think it would be the best thing for us." 
I was speechless...because he said exactly what I was thinking. I couldn't be more elated that we're on the same page with everything. 
It's not that we're not able to buy a house, because we are. It's that we shouldn't rush - and if we were to go through with it we'd be feeling very rushed.

And so, this weekend we will begin looking for a house to rent. 
Already I feel a very large weight lifted, and am glad that we're giving ourselves time to settle into our lives as a married couple instead of jumping right into a very big financial commitment so soon after the wedding.
