Cheezy Corny Chopped Salad


This ones a personal favorite of mine. I probably make it way too much for my own good, but I can't help it!!

Happy Belated Mom's day to all of you who don that title.
D's been out of town since last Friday so I had the Sis over and we rocked it "girlie weekend" style. There is something truly medicinal about laughing hysterically at yourself. We always managed to do this non-stop when we're together.

Saturday evening we watched three Buster Keaton flicks, and in between movies and snacks we managed to blow up roughly forty balloons to decorate my house with...for Mothers Day of course! What good is a holiday if you can't have balloons?? Needless to say the Mom was happy to see them strung throughout the house (and I'm leaving them up for when D comes home tomorrow --- a perfect way to welcome him back!!).
We had a ton of yummy snacks, played with the cheap party favors I picked up from my neighborhood drug store, and went around in a circle sharing stories that related to Mom and our childhood (one of my favorite things to do during family gatherings).

I came up with a couple very simple and YUMMY rawfood party snacks/treats that I'll share with ya'll under the cut...

A Salad (of sorts) that I had for dinner the other day...
I was in a hurry to eat, but right before I gobbled it up I realized how unattractive it looked on the plate. Oh well, it's just proof that not everything I eat looks "pretty"

 

Now tell me that this doesn't look weird, and kind of gross. At least it tasted much better then it's appearance.

In Layers:
*Sprouts
*Sunflower Parm
*Spiral-cut Carrot
*A few dashes of Vinaigrette
*Minced Sundried Tomatoes
*Julienned Cucumber
*Julienned Mango
*Topped with Agave-Mustard-Avocado dip (sounds weird, but it's SOO good!)

Tonight's dinner was not very exciting, but thinking about the possabilities of the dish - I know it has a lot of potential. 
I think the next time I make these I'll go a little crazy with the layers. On a side note, making a simple patte to put inbetween each layer would be a great way to keep the veggies from falling away from each other.

Simple Veggie Napoleons:




From the bottom up: 
Zucchini round, a layer of spreaded avocado, shredded carrot, dill weed, tomato, dijon mustard, shredded yellow zucchini, topped with fermented garlic. - Served up on a bed of romaine.

Three cheers for Friday - and to the end of a busy week!
Today was a day full of adventures - meeting new people - discovering new businesses - learning more about my wonderful little neighborhood community. I like getting older, I think age is making me appreciate the little things in life, while adding so much more quality to my life. 

Made a pretty happy salad, with a cali-flower/pumpkin seed patte. Proceeded to eat it for lunch - and was very satisfied.

Cali-flower and pumpkin seeds, with nut.yeast, lemon, a tiny amount of evoo, chopped chives, and a tiny amount of agave.

It's been a nice night.
After my work out we took Lucy for a walk to Figs (the movie store), and rented "Drill Bit Taylor". I think I liked this movie --- mainly because the lead three characters (minus Owen) were adorable! But the drastic see-saw between reality-humor and comical slapstick was a bit frustrating, and I found myself clenching my fists in a fit of twisted desire for a gorey bashing at the end. Yes. 
The bullies in this movie were convincing. One of them really looked alot like a young John Cusack...(my secret crush).

Before the movie I made a very pretty meal for dinner - day four of raw food only. I have to say, while I don't plan on eating 100% raw all of the time, this new discovery in the world of raw food has changed the way I feel about eating completely.
