Mac-Cheeze!!!

I'm not going to lie...I'm really excited about this one!
I liken the flavor of this cheeze to Jarlsberg crossed with Cheddar - slightly savory.
Dangerous, really dangerous.
And NO dehydrator or fermentation!
It's up for viewing on the bloggy-poo!

Greetings from Zucchini-land
Aug. 11th, 2009 09:13 pmI've been in a silly state of bliss, surrounded by massive amounts of my favorite vegetable, the Zucchini. Thanks again to my wonderful friends for letting me empty out their Zucchini stock. Every bit of the wonderful gourd has been shredded in my food processor, and at the moment I've got roughly four pounds of Zucchini (along with a few simple spices) in my dehydrator...

Okay then. I have to tell a short story first...
When D and I were on our way to Tahoe (with puppies in tow) I had a lot of wonderful raw food prepared and packed up for the trip. Among the copious amount of foods was dried Zucchini - or what I call "Zucchini Jerky". A Very simple recipe, if you haven't done it yet:
Thinly slice Zucchini lengthwise into strips
Add a dash of the following ingredients:
Extra virgin olive oil
Lemon
Braggs Liquid Aminos
Sea Salt and Cracked Pepper
Touch of Agave
Mix well
Dehydrate 8-9 hours
Anywho --- back to what really matters!
I reached behind the car seat, into my pink leopard print tote bag, and grabbed my little bag of "Zucchini Jerky" to have a quick snack.
While I enjoyed the chewy, slightly crunchy taste of the dehydrated veggie my mind began to race - and those thoughts went something like this:
"Wow! Zucchini sure does take on a wonderful flavor when it's been dehydrated...it almost reminds me of cheese...
Cheese...yeah! I bet I could shred Zucchini, dehydrate it, and turn it into a type of raw cheese!"
The rest of this story is pretty much raw food history, or at least in my opinion it is.
Thanks to my great friend Chelsea who recently bought me a recipe diary that fits perfectly in my purse, I was able to jot down the idea for "Shredded Zucchini Cheeze" while on vacation, and when I came home, inducted the recipe into my own personal raw food recipe hall of fame.
*Drum roll*

Lets try it out on raw...PIZZA!
