I've been meaning to post this sooner - and I'm really excited to finally do so!

Last weekend, when my lil' sis was staying over I finally decided to try my hand at making raw chocolate pudding. The results were verrrry impressive, considering the fact that I totally winged it and made up the recipe as I went along!
My only complaint is that it turned out soooo freaking rich and sweet - and because I'm not a big fan of sweets I'm now finding myself in a situation with a lot of chocolate pudding, and not enough people to eat it. For now it sits in the freezer, until I can get some mini re-usable pudding cups, or some popsicle molds (they'd make the BEST fudgesicles!).

The lil' sis and I had the pudding over some fruit salad, and right now I've got some bananas in the freezer that have ben dipped in it. Feel free to come over and help me finish the rest of it!


Raw Chocolate Pudding - (makes a lot - so feel free to halve it)

1 cup raw cashews (soaked 2 hours)
1 avocado
1-2 tbsp coconut butter (optional - can sub for another half of an avocado)
5 medjool dates (soaked 10-25 minutes) 
1-2 cups water (add one cup first, and more as needed for desired consistency)
1/2 cup agave nectar or pure maple syrup (to taste)
1 tsp vanilla bean powder (or extract)
1/4 cup carob powder
1/4 cup cocao powder 

---Blend or Process---add more water as needed for desired consistency
Chill in fridge or freezer, and EAT, and SHARE, and SMILE!

 P.S. I have to thank my sister Rae for this one. Without her help I wouldn't be able to share this recipe. She stood by my side and wrote everything down as I performed my crazy kitchen magic.
