OMG that sounds AMAZING! i've had brown rice pasta once or twice over the last year and done something similar - it's pretty amazing how versatile that shit can be! i've made some KILLER vegan/gluten free cooked mac n' cheeze in the past using my Monsterella Cheeze (http://www.addictedtoveggies.com/2010/04/raw-cheese-good-kind.html) and some some home made almond milk. goddamn it was good!
