I've actually got some yummy food to share (Yay), but unfortunately no new camera (yet) so sincere apologies in advance for the crappy in quality pictures. I promise the food will make your tummy and taste buds very happy though!

So without further ado --- here's what I've been eating lately (for dinner tonight, actually):


"Meaty-Nutty Ground Almonds"


"Deviled Cucumbers" (featuring "Meaty-Nutty Ground Almonds") and a simple salad

  
"Meaty-Nutty Ground Almonds"
 (you can use Walnuts or Pecans for this if you don't have almonds on hand) 
In a Food Processor:
Two Cups Almonds (soaked overnight)
Three Tbsp Nut.yeast
Three Heaping Tsp Onion Powder
Two Tsp Dulse Flakes (optional)
One Heaping Tsp Dillweed
Two Tsp Dehydrated/Ground Green Bell Pepper (optional, but really good if you have it - or make it like I do)
One to Two Tsp Paprika
Three or Four Tsp Extra Virgin Olive Oil
One circle (around the food processor) Agave Nectar
Two Circles Braggs Liquid Aminos or Sea Salt to taste

"Deviled Cucumbers"

Okay, so I HAVE to preface this recipe by saying that I'd been dreaming this up all day today and was really excited to make them for dinner tonight. Seriously, these are the BEST things I think I've created thus far in my kitchen. Very simple, very fun, and veryveryvery yummy. The reason why I've decided to call the "Deviled Cucumbers" is because to me they look like a freaky raw version of the real Deviled Egg. But of course they're nothing like a Deviled Egg, but so much more better. Here goes... 

"Deviled Cucumbers" - this recipe makes what I think is good enough for one - so double if you're planning on sharing:
Step One:

1 Avocado mashed really well
3 Tbsp White Onion - very finely chopped
1 or 2 Tsp Lime Juice (I go heavy on the lime because I love it)
1/2 (or maybe a little bit more)Tsp Agave Nectar
1/2 to 1 Tsp Mustard --- Edit
Sea Salt to Taste - maybe a couple good dashes.
Mix Really well - taste it just to tease yourself. I could've easily just eaten the Avocado mixture alone --- it was SO good.

Step Two:
One Large Cucumber.
Peel your Large Cucumber
Slice half inch thick rounds
Take Six or Seven of the rounds (depending on how much Avocado Mix is leftover from your tasting it) and place the rest of your Cucumber in an air tight container in the fridge,  you'll want to make this again, soon. I promise.
Spoon the Avocado Mixture onto the Cucumber rounds, and top with "Meaty-Nutty Ground Almond" --- or Paprika.

Enjoy With a Simple Salad of Romaine, Red Cabbage, Finely Ground Pumpkin Seed Powder, and Viniagrette.
