Oh man - I wish nappa cabbage was in season all year round. I seriously love it so much that I'd marry it, if I weren't already committed to an awesome guy (who brought me home pretty flowers tonight).

This wonderful cabbage served as the "Taco" portion of my dinner tonight...raw tacos...ohhh yum! 
It all starts with a wonderful, and super quick&easy "onion-less pico de gallo" (onion-less because I forgot the onion! hehe!)


It started with fresh corn, cut right off the cobb - and of course, avocado...


Bell pepper and tomato - before dicing...


After dicing - and lots of spicing. Spices: tons of cracked black pepper, garlic powder, sea salt, cumin and chili powder. I diced the pepper and tomato again with the spices to get them as full bodied as possible...then added them to the avo and corn...

Added lemon and lime juice to these ingredients...(if you haven't noticed it yet - that's my favorite pink mixing bowl)


From the fridge came my marinaded (overnight, and all day today) butternut squash. 
Marinade: lemon juice, red wine vinegar, evoo, dried herbs(celery, lemon basil, dill, parsley)...I think that's all.
*Side note: Whenever I use the spiral slicer I'm left with little rounds of whatever it is I'm spiralizing, because the slicer never goes all the way to the end of the veggie. I usually take the left over veggie rounds and incorporate them into the following days meal. In this case, the butternut squash left-over rounds were used.

One way to eat a raw taco...

But this way was much less messy!

And I have to give a photo shout out to [profile] v_gan because when I was chopping up the bell pepper for dinner, and got to the end of it, lo and behold!:



Mickey Mouse! I almost put a little face on it - but I think I would've felt a little weird about chopping it up if I'd have done that.

YUM! I don't even need my cooking mag subscriptions anymore-your site has given me a month's worth of inspiration! How does your husband feel about the raw food? Is this something you're doing together?

Aw! Mickey! (And, yeah, that would've been sad to chop up Mickey.)

You seriously make me want to eat raw food every day. I don't really have any other motivation other than your amazing food pictures. I love using lettuce and cabbage instead of wraps or taco shells, I just hardly ever do it.

Speaking of motivation.. What exactly made you want to try a raw diet?
